Red, White & Blue(berry) Refreshers
America's birthday is right around the corner, and what better of a way to celebrate the national red, white and blue than with a patriotic treat?
After a day full of celebrating with the 3 F's - friends, food & fireworks... there's nothing better than cooling down with a refreshing confection.
What's even better? This tasty treat is made with only 3 ingredients and it's something fun you can make with the kiddo(s). Talk about a win/win!
Ingredients needed: coconut water, strawberries and blueberries! That's it. All the ingredients I used are organic.
Tools needed: mini star cutter (preference only), Popsicle molds, a knife & an extra cute set of helping hands!
Get your little helper, slice up some strawberries, stamp them into little stars, or cut them by hand (if you’re that talented).
Sprinkle in your freshly stamped strawberry stars into the base of the popsicle molds.
Next, spoon in a scoop of fresh blueberries into each Popsicle mold.
Now fill up each mold to the max fill line with the coconut water (or juice of your choice). If I had real coconuts, I would have cracked them open and poured the juice right from the source, but I was out, so the next best option was coconut water.
Add the base with the handles into the molds. After the bases are secure give them a good shake (over the sink in case of spilling).
Pop them into the freezer for a few hours, and voila! You have a delicious, healthy & patriotic Popsicle to cool down with.
Enjoy the fruits of your labor!
